Ten Years!
Today is our ten year anniversary! I feel so blessed to have the wonderful husband and family that I have. Hope the next ten years are just as great...and slow down a little bit.

Citizen of the year
Yeah! We are so proud of Michaela for getting citizen of the year at school. She is such a sweet and caring little girl and we are so happy to have her as part of our family!!!

Turkey Hunting

Saturday night Donnie took us turkey hunting! Even though we didn't get a turkey we had lots of fun and got to hear a few gobble fairly close to us. The kids thought that was pretty exciting. With all of out there its hard to be quiet and still. Hopefully I'll have an update to post on Donnie's hunging success.Tuesday, April 29, 2008
Cafe' Rio Burritos
We tried a new recipe last night and liked it a lot! (it looks a little long, but don't get overwhelemed it's yummy)
Café Rio Sweet Pork
3-4 lbs Pork Roast
1 cup salsa (use mild to spicy depending on your taste)
1 cup brown sugar
Combine salsa and sugar until well mixed. Pour over pork roast in crock pot. Cook until able to shred. Usually 6-8 hours on low.
Café Rio Rice
6 c water
4 t chicken bouillon
4 t garlic –minced ½ bunch cilantro
1 can green chiles—or equivalent fresh
¾ t salt
1 T butter
½ onion
3 c rice
Blend cilantro, green chiles and onion together in food processor. Bring water to a boil and add all ingredients, simmer covered 30 minutes.
Café Rio Salad Dressing
1 1/3 cup sour cream
3/4 cup mayonnaise
1 bunch cilantro
1 package ranch dressing mix
4 tbsp. Salsa Verde (green Salsa)
2 cloves garlic
1/8 tsp Tabasco sauce
Juice of one lime
Mix together in blender. Makes quite a bit.
Pile these together in a tortilla!

I'm Back!
I went to Time Out for Women this weekend in Albuquerque with some of my great fiends. We had so much fun! We left early on Friday and got there in time to do some shopping and had dinner at P.F. Changs (YUMMMM). The conferance was so uplifting and they had some really wonderful music! This is only the second time that I have left my kids so that was a little (some may say more than a little) hard for me but my mom and Donnie did a great job. I got to spend some time getting to know some really neat women from my church and that was one of the best things about the trip! (They wore me out though)
